The incredibly stylish Gavi presents an aroma of lime and yellow plums. Dry, fresh and medium bodied and orchard fruits. Good with seafood, excellent with fish or white meat.
Winemaking Process
Cortese grapes are delicately pressed and their stalks are removed. The must ferments in stainless steel vats at a controlled temperature of 18°–20°C for about 20 days. After fermentation, the wine is kept in stainless steel vats until the bottling.
About Elio Filippino
Elio Filippino’s philosophy is to produce the highest quality wines with respect to the unique nature of native vines and the character of the terroir.
Elio’s winery is located in the scenic village of Neive, on the right bank of Tanaro River which is an UNESCO site and very close to Alba, a truffle capital. In the hamlet of Serra Capelli in the early 1900s, when the vine was already cultivated, Evaristo Filippino began experimenting with the production that was to continue and develop. The estate only produced grapes at that time, selling them to other wineries.
In the fifties, his son Domenico realized that the results could be improved if the grapes were transformed into wine. He decided to make wine from the grapes produced by the estate vineyards and between the end of the eighties and the beginning of the nineties, the winery further increased its activity and began bottling its own wine.
Today, Elio Filippino, son of Domenico, uses the traditional and natural methods of superior winemaking without using chemical fertilizers or herbicides.
The estate consists of two quality wine-growing areas: Serra Capelli, and San Cristoforo. The vineyard sits on a great landscape of steep rolling hills above 350 m sea level. The vineyards are painstakingly by hand maintained. The splendors of elegant, fine and fresh terroir wines displays Elio’s excellent craftsmanship through times.
