Introducing Churchview The Bartondale Cabernet Sauvignon
CULTIVATED.
The Bartondale Cabernet Sauvignon features Churchview’s estate grown Cabernet Sauvignon from two separate blocks;
- their oldest block on the top of a rocky ridge with soil made up of gravel over deep clays and
- a new block with a North facing aspect
The 2018 vintage. A dry warm Spring and Summer meant it was tracking early but a tropical rain event in February which saw 80 mm across the region pushed back harvest dates slightly. The reds appreciated this rainfall. The slower than usual ripening allowed for better flavour development. This allowed for the Cabernet to slowly develop its quintessential dark fruit characters and deep rich flavours.
CRAFTED.
The fruit is gently transferred into a static red fermentation vessel, along with a Bordeaux Yeast isolate ready for fermentation. The fruit is left for 24 – 48 hours for a short cold maceration.
This wine is matured in French oak barriques for 16 months
CHERISHED.
COLOUR Intense deep crimson
AROMA Plums, blackcurrant, mulberry, black olives, tobacco, bay leaf and chassis. The savoury notes of the fine grained oak add complexity, and a touch of char and vanilla adds some depth.
FLAVOUR The palate is soft, supple and generous, with a fresh cherry and juicy fruits of the forest core engulfed in fresh tobacco nuances with smoky undertones. Medium bodied, entwined with chocolate and eucalyptus. A fine tannin structure and fine acid create a structure for the red fruits and the chassis to develop and cover the mouth. A long and satisfying fruit finish. This is a wine that will reward long term cellaring.
